Safe Transport of Food Products as per FSMA

Another aspect of the Food Safety Modernization Act (FSMA) that attempts to provide food protection throughout the entire supply chain is the safe food transport rule. According to an FDA press release, “the rule will require those involved in transporting human and animal food by motor or rail vehicle to follow recognized best practices for sanitary transportation, such as properly refrigerating food, adequately cleaning vehicles between loads and properly protecting food during transportation.” Along with maintaining refrigeration units, etc. an effective means of ensuring that the transport vehicles (as well as holding areas) are properly cleaned and/or sanitized before and after transport of food articles is to perform an environmental monitoring program on the vehicle(s) via use of swabs and sponges and having them tested by an accredited microbiology laboratory for microbial contamination, pathogens, and in some cases allergens.
